Monk Fruit as a sugar replacement

I can hardly believe that using the Monk Fruit granules worked in making Lemon Curd. Initially I have used the ratio of 2:1 (sugar: monk fruit). Everything looks like Lemon Curd using caster sugar, but the taste is delicious and so tart.
